What makes the Non Stick Surface so superior?

What does Hard Anodized mean in practice?

Hard Anodized Cookware was originally developed for the restaurant trade, and is twice as hard as stainless steel (for the chemists amongst us, it is aluminium that has undergone an electrochemical process altering the soft molecular structure making it super hard). It is an integral part of the pan and is extremely durable. An aluminium core is incorporated in the hard anodized surface, resulting in outstanding heat distribution ensuring even cooking and no hot spots. The hard anodized surface is also microporous allowing the non stick coating to permeate the surface and is permanently locked in. Due to it's extreme hardness, the hard anodized surface cannot easily be damaged and the non stick surface cannot be eroded. Resulting in superb performance and exceptional durability.
